Is there such thing as healthy cookies? Well, I think these ones are healthier than regular cookies.
It's a recipe that I have found on internet and changed some ingredients to fit our habits and diet.
Pumpkin chocolate chip cookies:
1/2 cup of almond butter
1 cup of brown sugar
1 cup of pumpkin puree
1 tsp vanilla extract
2 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
a dash of salt
1/2 to 3/4 cup of chocolate chip
(you can replace them with raisins)
1) Preheat oven at 350F.
2) In a large mixing bowl mix almond butter and sugar
3) add pumpkin puree and vanilla
4) add the flour, baking power, baking soda, cinnamon, salt and the chocolate chips
5) I used an ice cream scoop to form the cookies; Scoop the dough and place them apart onto a parchment paper (on a baking plaque).
6) Bake the cookies for 12 to 14 minutes
7) let them cool a little bit and enjoy!
